New York! That’s where I found myself Wednesday night, checking out the newly renovated America Restaurant and Bar.
And by New York, I don’t mean the Empire State. I mean New York-New York, the casino with the roller coaster on the southern end of the Las Vegas Strip. This is Casinos.com, after all.
America is a 24/7 diner inside New York-New York, and its extensive renovation is finally complete. The spot has been open for almost 30 years, and somehow, continued serving guests throughout its years-long makeover.
The restaurant remained open throughout the renovation, gradually introducing a more modern design and an expanded menu. Now that the work is complete, I stopped by the media preview last week to see whether the new America is worth a visit.
America occupies about 9,800 square feet at New York-New York. It’s gone through a pretty substantial transformation thanks to the architecture firm Zebra.
The diner previously had a traditional diner aesthetic with a patriotic red, white, and blue look. When you walk in now, you’ll see the sophisticated walnut, teal, and terracotta color theme throughout the restaurant, which gives it a really modern feel.
The high ceilings and the faux skylight do a great job of making the space feel naturally lit, echoing the original America restaurant in Manhattan.

But one of the biggest changes is right in the middle of the dining room.
The original America restaurant in Manhattan, which opened in 1984 and closed in 2005, was known for its giant sculptural map of the United States. New York-New York’s location had its own version, and this renovation reimagines the feature as a large, projection-mapped canvas that changes throughout the day and the night.

It’s one of the biggest design changes in the space and definitely a unique aspect of the place. But boy, is it large — good luck fitting the entire thing into one picture. In a way, that size is part of what makes it stand out when you’re actually sitting inside the restaurant.
If you look at what the place used to look like, it was pretty dated. While I get the appeal that some might have found in a tacky, old-school diner aesthetic, it’s 2026. Vegas looks very different from when America opened at New York-New York. The Strip has started to move away from that aesthetic and is increasingly packed with restaurants designed to be destinations in themselves. Even casual dining spaces have to compete for attention.
To compete with other 24/7 spots on the Strip, the place has to look like it belongs in 2026, not 2006. And it does!
The renovation isn’t limited to the dining room. America’s Executive Chef Brandon Flores has added over a dozen new dishes to the menu across breakfast, lunch, and dinner.
You’ll see new additions like seared salmon with cauliflower purée, a cauliflower steak with tomato confit and balsamic vinaigrette (for the vegans), and a bacon mac and cheese with a gourmet cheese blend and a crispy herb crust.
At the media event, I got to try out samples of the breakfast burrito, Philly cheesesteak, Nashville fried chicken sliders, and the prime rib. They also had a delicious dessert table that definitely gave me a toothache just looking at it.

I was a little disappointed that more of the menu highlights weren’t available to sample. My mouth was watering as I read the press release weeks ago, and that bacon mac and cheese seemed promising.
When it came to drinks, the “Cadillac Sunrise” was the bomb. The cocktail features Flecha Azul tequila, Grand Marnier liqueur, raspberry, citrus, and cranberry. It was my favorite thing I tried all night.
Many waitresses in New England Patriots gear came by, offering the “Fruity Booty” cocktail made with Appleton rum, Grand Marnier, Luxardo liqueur, and pineapple, but it was a bit too strong for me (unless I got lucky with such a heavy-handed bartender).

There is also a Strawberry Shortcake Loop cocktail on the menu, featuring Skyy vodka, cream, Fruity Pebbles, cranberry, and lemon. It’s served in a donut-shaped glass topped with cotton candy, but it was unfortunately not available to try. Which was likely for the best, considering that it would’ve been too much even for my sweet tooth.
The food was delicious, overall. With all the changes, it’s a fun and photogenic brunch spot to swing through if you’re already at New York-New York. The renovation makes it more encouraging to want to stop by.
If you’re wondering about cost, prices here are pretty standard for a Strip diner. The Fruity Booty is $14, and the Cadillac Sunrise is $15 – both standard pricing, considering I’ve seen drinks half this size going for closer to $20 elsewhere on the Strip.
Food prices are similar. The Nashville hot chicken sandwich and the Asian chicken salad (didn’t try it this time) are both $19. So yes, you’re paying a bit of a Strip premium here compared to eating off-Strip. But it helps to think of that premium as more of a convenience fee, since you’re paying for the location, the hours, and the level of service that comes with being on the Strip.
This renovation is years in the making – get ready for some numbers.
When Ark Restaurant extended America’s lease at New York-New York in June 2022 until 2033, the agreement included a $4 million renovation commitment.
Based on Ark’s SEC filings, that spending occurred over several years rather than all at once. Broken down by year, the restaurant spent:
This was still short of the full $4 million commitment at that point. The project was supposed to be finished by July, but ended up slipping to September.

Ark had said the goal was to turn America from a restaurant that mostly served hotel guests into a destination people would seek out on their own. Based on my experience, it’s a much better-looking, more modern space than before. I’m sure that guests staying at the hotel will be pleased that the 24/7 option isn’t a run-down, dingy diner stuck in the 2000s (which are still around, just rarely on the Strip).
Not every restaurant needs to be a destination worth crossing the Strip for. Sometimes the best option is the one that’s right downstairs from your hotel room when you’re hungry at 2 a.m.
It also doesn’t hurt that MGM is still offering its all-inclusive package, which encourages people to check out New York-New York’s dining options, bars, and the Big Apple rollercoaster. That likely means there’s more foot traffic through New York-New York than the property would normally have. The renovation seems like a valid bet to stay relevant with a younger crowd coming through and giving them a better backdrop for their Instagram posts.
America is operated by Ark Restaurants, which is a publicly traded company established in 1983. They also run several other restaurants and dining operations at New York-New York and Yolo’s Mexican Grill at Planet Hollywood.
